Earl Grey Margarita | Tea Cocktail

June 10, 2016

Bergamot, a hybrid of  the sweet lime and part of our Hope & Glory Earl Grey tea, is the perfect partner for a classic Margarita; sweetness, sourness, bitterness and salt in equal measure.

2 Hope & Glory Earl Grey teabags or
2 tsp Hope & Glory Earl Grey tea leaves

250ml (9oz) caster sugar

250ml (9oz) boiled water

50ml (2oz) Tequila

25ml (1oz) fresh lime juice

Step 1

INFUSE pyramids for 5 minutes in 250ml of boiled water and 250ml caster sugar to make a tea syrup, stir until sugar dissolves.

Step 2

REMOVE pyramid, or strain if loose, refrigerate to cool.

Step 3

COMBINE 15ml of cooled Earl Grey tea syrup, with 50ml of tequila and 25ml of fresh lime juice.

Step 4

SHAKE over ice, and strain into a chilled margarita coupette, the edges of which have been dusted with salt.
